Maureen McCoy is a dietitian focusing on children’s nutrition.

She analyzes the effects of nutritional disparity in children and the systemic obstacles to positive health outcomes. Her work on using food stamps for healthy food choices to lower cardiac health risks has been featured in various publications 

McCoy is a lecturer in the College of Health Solutions. She leads the Pitchfork Pantry, a food bank for university students in need.
