Maureen McCoy is a dietitian focusing on children’s nutrition.

She analyzes the impact of nutrition disparity in children and systemic obstacles to positive health outcomes.  Her work has been featured in various publications regarding the ability to lower heart health risks through the use of food stamps for healthier food choices.

McCoy is a lecturer in the College of Health Solutions. She leads the Pitchfork Pantry, a food bank for university students in need.
