Simin Levinson's work explores the niche aspects of nutrition in professional athletes, including team size, collaboration and risk of eating disorders. Levinson is a clinical associate professor for the College of Health Solutions and the academic program lead for the university's nutrition programs. She uses nutrition as an aspect of training to help the athlete improve their conditioning.

Levinson is a member of the Academy of Nutrition and Dietetics, Professionals in Nutrition for Exercise and Sport, and Sports, Cardiovascular and Wellness Dietetic Practice Group. She has worked as a dietitian for the Phoenix Suns and Phoenix Mercury.
